I just wanted to take a second to reflect. I have been running Centurion for a year and a half and in that time I have met the most amazing group of patrons I have ever know in my 15 years in the restaurant industry.

I have been very lucky here with the customers I have met. They converse with all of us here at Centurion like we are all old neighbors. We talk about the many things that everyone take about and it gives me a sense of warmth every time I walk into the restaurant.

Is it hard work you bet! Me and my now fiancée Michelle got engaged here last June. Now working side by side with her for over a year and a half only makes me want to marry her more. We have actually been working side by side for two and a half years straight without a vacation except for a day or two off for holidays. This is a truly family owned business. My mother is my business partner and part of my vision for this restaurant was to embrace her hard work throughout her career of being a Latin professor for 30 years.

Now on top of all of that I have received 3 awards for one dish we serve, our signature dessert the Aztec. Which again would not have been possible without the support of my amazing family and just as amazing guests. So I wanted to write this to say thank you to you all. Everyone’s support has brought my vision to fruition and I couldn’t feel more blessed.
